I just had to share this recipe I made for dinner tonight because it was so good! It's Chicken Breasts Stuffed with Artichoke Hearts and Goat Cheese! My kids loved it and the best part is that it's from Cooking Light! I served it with spinach and Yukon Gold potatoes that I roasted with shallots, olive oil and kosher salt and then tossed with chives when they came out of the oven. My son made an amazing appetizer but that recipe deserves a post of it's own so I'll make it again soon and share it then.

Edited to add: The goat cheese is not really strong in this recipe so even if you don't like goat cheese you may like this. It calls for goat cheese or feta...I used the goat cheese (Chevre) but I may try it with feta next time.

I am just drooling over this one! I love everything in it and I love how fancy it could be, for entertaining but it could also be a weeknight meal. Yum, I would love it with either cheese.

Sounds like a good recipe, I would add a splash of white wine when making the sauce for some added depth of flavor. Thanks for sharing!!

Inspired by your post, I hot-footed it down to the local supermarket to buy supplies. NO FROZEN ARTICHOKE. Not surprised really as they've only just recognised basil as a shop essential. I've substitued it with asparagus. I'll let you know how it turns out. xx
