My Oatmeal Cookies

Last night I made some yummy oatmeal cookies! I started off using the Quaker Oats Famous Oatmeal Cookie Recipe but I stirred in 3/4 cup of chopped dried apricots and 1/4 cup of shredded coconut. After I baked them and let them cool I dipped them in melted white chocolate and popped them in the fridge for a few minutes to firm up the chocolate.

There is something about dried apricots and white chocolate...they just go so well together! Mmmm-mmm good!

Oh my goodness, that looks delicious! I have been trying to watch what I eat but I dont think I could resist those if I had them in my house.

Oh goody! I am one of the first ones so the cookies won't be all gone yet :)
I like the idea of adding the apricots, coconut and dipping them in the white chocolate!

Oh my, Cindy! The cookie looks soooo delicious. I couldn't eat yours because I cannot eat gluten, but after this comment, I am going to run into my kitchen and make some gluten free oatmeal cookies. My hubby just got done grating some coconuts.

Never thought of dipping oatmeal cookies in white chocolate. The next time I have friends for tea I am going to make a smaller version with the white chocolate as part of the dessert selection. Thank you for a great idea. Actually I am home sick today, so don't have the desire to make/taste cookies. Yet they look so good, when I feel better I just have to make these. I add chopped cranberries to my oatmeal cookies which will go beautifully with the white chocolate.

Yummmo! That looks so good! You girls that bake are going to get me in trouble. How can I loose weight when I have to try the goodies? Hey we have to blame it on someone... Right? Thanks for sharing & I am going to try this. (I tried a peach crumb last night from another blogger) I love it when the weather cools makes you not mind baking.

What a tasty twist to oatmeal cookies, and I LOVE coconut! I will definitely try these ~ I've been majorly in the baking mode since Sunday, so this will get me to try something different than my usual goodies. Thanks for the great idea! Gosh, that picture sure makes my mouth water ;)

Sounds wonderful. I really do like dried apricots. Honestly, I don't feel that oatmeal cookies should count as a dessert. They are so good for you!

I've never thought about using dried apricots in my oatmeal cookies, but it sure sounds good. I am going to try it, instead of raisins. And the white chocolate, oh boy....
