In our family we call this Meat Love, not Meat Loaf! That's because when Vince was about 3 years old he asked me one day if we could have Meat Love again for dinner! It took me a few seconds to figure what he was talking about! Ever since then Meat Loaf has been affectionately called Meat Love in our home!
To me, this is the ultimate comfort food-- meat love, roasted-garlic mashed potatoes with chives and roasted brussel sprouts!!! This is the meal I chose as my final meal on Sunday night right before I started Weight Watchers on Monday morning! There won't be any meat love and mashed potatoes for awhile but at least I can still eat brussel sprouts! (Actually, I can still eat meat loaf and potatoes on WW, just not very much).
My (very simple, but good) Meat Love recipe:
2 lbs ground beef (or a equal combination of beef, pork, & veal)
1/2 cup fresh bread crumbs
1/2 cup milk
1 egg
1 teaspoon salt
fresh ground black pepper
1 finely diced onion
2 slices of bacon
Preheat oven to 350. Butter loaf pan. Mix all ingredients together (use your hands) except for the bacon. Place meat mixture in loaf pan and lay slices of bacon on top. Bake for 45-60 minutes. Remove from pan and place on serving dish. Serve with ketchup!

My hsb and I love meat love - my yooungest dtr on the other hand...when she was abt 4 I couldn't believe a child of mine didn't like meatloaf so I made individual ones and called them Italian hamburgers - we all waited for her to take a mouthful, she chewed it got a werid look on her face and said I don't care what you call it, I DON"T like it lol....so for yrs b/4 she grew up and moved out we only had it when she was eating somewhere else.....thanks for the memories

That dinner looks amazing. I'll have to give your Meat Love recipe a try. Lately, I've been trying new recipes and replacing the old favs. I prefer the chocolate chip cookie recipe on the Ghirardelli package and the Oatmeal cookie recipe on the box lid, and I tried a new roast beef recipe last week that is the best! :) Thanks for sharing!

How cute! Kids always say such cute things and I love when they stick and become a family saying.
I know you will love WW. It is really a great plan. I've lost 29.6 lbs so far and it's only been about 3 months.

How do you make roasted brussel sprouts. Never had them roasted. They look delicious. The entire meal looks wonderful. Vince is handsome for sure. Bet sometimes when you look at him you still your "little boy". My son is 28 and married but I still see my "little boy" at times. Have a wonderful day!

I like meat loaf too. I've never tried putting bacon on the top but it sounds good. The last time I made it I shredded some of the zuchinni left from our garden, into it. Boy, was it moist.
