More Pumpkin Muffins


A couple weeks ago I showed you the Brownie Muffins I made just using Devil's Food cake mix with a can of pumpkin.  Jodi left a comment on that post and said she makes the same muffins with Spice Cake mix! I knew I had to try that because Pumpkin Spice Muffins just sounded so good!



Everyone loves these better than the chocolate muffins! I know...unbelievable!


They are so easy to make too!  Just a box of Spice Cake Mix (I used Duncan Hines) and a small can (15 oz) of Solid Pack Pumpkin.  Mix these two things together and DO NOT add water, eggs or oil or anything else! Scoop the very thick batter into 12 paper-lined muffin cups (I used a ice cream scoop and it worked great)!   Bake at 400 degrees for 20 minutes

The best part...they are only 181 calories each!!

  3. That's amazing, only 181 calories! I'm going to put cake mix and pumpkin on our shopping list so I can make some. I'm in the process of losing all the weight I gained after meeting my husband so these will be perfect!

  11. Hey Cindy...I have made these muffins before and they are really delish. Like most women my age I'm always looking for a low calorie snack. Your pics were delightful...love the little blue cupcake papers. Great post.

  18. Oh, how yummy! I love pumpkin muffins! And 181 calories...gotta love that! My Mom and I like to add a little cream cheese to the top of our pumpkin muffins.

  26. Cindy, Thank you so much for the link in your post, I'm glad you like the muffins. I tried the Banana Crumb muffins you posted awhile back and they are now one of my favorites.
    I saw that one of your favorite books is Mary Carol' Entertaining book. I know her through my sister-in-law and she is a really sweet, funny,talented woman. Her original store is about an hour away from where I live and so much fun to visit. She opened another store here in Kansas City a few years ago and it is great too. We got to tour her home at Christmas and it was amazing!! I will try to remember to post pictures on my blog next time we go and send you a message. Have a great day.

    I made these muffins this weekend and they were fantastic. This is a big deal for me because I never bake anything ever. But I love pumpkin muffins and I didn't have to buy a bunch of ingredients..so they were perfect. I will definitely be making them again especially in the fall. Last fall I wanted a pumpkin muffin so bad and never got one...that will not happen again...thanks to you.

  38. Ooh, Cindy, I made the chocolate mini muffins yesterday to take to my daughter's high school orchestra concert last night. They were wonderful! I added the mini chocolate chips, as you did. I've been thinking, though, what about add Reese's chips? Yum-o. I'll bet that would be good. I'm going to try your spice cake ones too.
