My Oatmeal Cookies

Last night I made some yummy oatmeal cookies! I started off using the Quaker Oats Famous Oatmeal Cookie Recipe but I stirred in 3/4 cup of chopped dried apricots and 1/4 cup of shredded coconut. After I baked them and let them cool I dipped them in melted white chocolate and popped them in the fridge for a few minutes to firm up the chocolate.
There is something about dried apricots and white chocolate...they just go so well together! Mmmm-mmm good!

  7. Oh my, Cindy! The cookie looks soooo delicious. I couldn't eat yours because I cannot eat gluten, but after this comment, I am going to run into my kitchen and make some gluten free oatmeal cookies. My hubby just got done grating some coconuts.

  9. Cindy,
Never thought of dipping oatmeal cookies in white chocolate. The next time I have friends for tea I am going to make a smaller version with the white chocolate as part of the dessert selection. Thank you for a great idea. Actually I am home sick today, so don't have the desire to make/taste cookies. Yet they look so good, when I feel better I just have to make these. I add chopped cranberries to my oatmeal cookies which will go beautifully with the white chocolate.
