Last night I came home from work and realized I forgot to take some meat out of the freezer for dinner so I was forced to be creative with what I could find in the fridge and pantry. I was surprised that I was able to make this yummy pasta!
Notice the 3 types of pasta? That's because I had a little bit left of each kind but not enough of each to use only one of them.
Here's how I made this (sorry I don't measure anything). I sauteed 1 diced onion. Added some left over cut up chicken breasts from the night before. Threw in a can of Campbell's Cream of Chicken Soup. Added some white wine and chicken broth to thin it out. Steamed some broccolini and added that. Tossed in the cooked pasta. Seasoned with some salt, fresh ground pepper and red crushed pepper and tossed in some Parmesan cheese. Topped off with some fresh parsley. It was easy and so good. I'm going to be making this again!
Cindy - that pasta looks delicious! Isn't it fun to be creative in the kitchen? Sometimes those are the best meals. Thanks for stopping by my open house!
ReplyDeleteThose are our favorite kinds of meals, a little bit of this and a little bit of that leftover!

Hi Cindy
ReplyDeleteI think your home and blog are beautiful.
I am prettty new to blogging and am having a good time networking with others.
Your dinner looks yummy. It made me smile because I am know as "The Cupboard Queen" I hate going to the store so I will do anything to avoid it, and have come up with some pretty good stuff. My Husband takes leftovers to work for lunch and will often times share and his co worker says"I guess we will never get this again?" because I never write down what I have done.
Thank you for sharing

Sometimes he simplest things are the best. Looks yummy and a good "go to" meal for leftover chicken of all sorts (or Turkey if we hadn't just all thrown out the last scraps)
ReplyDeleteOooh, that sounds delicious! I love how you have several different pasta shapes in there -- it looks so good!

Hi Cindy,
ReplyDeleteThis sounds terrific! My guys love the meals that I make on the fly with a little of this and a little of that better than the ones I toil over. I'm tucking this idea in the back of my head, thanks for the idea :)

Dena

Hi Cindy! I KNOW that meal is delicious because I make it with spinach (the creamy one but I don't know if you have that in the States). Is broccolini the same as broccoli? Never heard of it here in the Netherlands...
ReplyDeleteHave a nice weekend!
