Rosemary

Basil is my favorite herb but rosemary is a close second! There is something about fall that makes me crave food containing rosemary. Last weekend I made two of my favorites. Rosemary focaccia and a pork roast with a garlic rosemary rub.
I've been making this rosemary focaccia for years. I still remember the first time I made it and my first bite...I was in heaven! There is nothing like fresh warm homemade bread! Click here for the recipe.
A friend (and coworker) gave me this recipe for a Rosemary Garlic Rub. It is so good. I love it on Tri-tip but I used it on a pork roast and it was also good. Above is what it looks like before it's cooked. I rub it all over in the morning and then put it back in the fridge to marinate. Then I roast it for a couple hours. It gets this nice garlicy, spicey crust on it. It has a lot of fresh ground pepper in it so that's what gives it a little kick.

Rosemary Garlic Rub

1 tablespoon ground black pepper
1 tablespoon kosher salt
3 tablespoons chopped fresh rosemary
1 tablespoon dried rosemary
8 cloves garlic, diced
1/3 cup olive oil

In a small bowl, mix black pepper, kosher salt, fresh rosemary, dried rosemary and garlic. Gradually stir in enough olive oil to form a thick paste. Rub into desired meats before grilling.

    I do a similar rub on my tri tip, I just tend to use a bit more garlic (love garlic) and it is yummy!

    and all three have strong health benefits, esp. Virgin Olive Oil and Garlic.

  6. Wow! That looks so good. I would love to have a thick slice of the roast & the bread for dinner. I love the combination of rosemary, garlic & olive oil - that is what I put on potatoes when I roast them. You make your own Focaccia bread ? You are multi-talented.

  18. I just harvested all my herbs for the fall. I have loads of taragon, sage, and rosemary. I'll have to try these recipes.... looks so yummy.

  21. I just wanted to say, the recipes look great! I love tri-tip! We moved last year from the Sacramento area to Georgia. I am sooooo happy we have Costco, they are the only place I know of in the Metro Atlanta area that carry my beloved tri-tip. Before we came no one had ever heard of it. I have to drive about an hour to the nearest Costco but it's well worth it. I love the wiki definition. I know have a list of people that I pick one up for when I go.

  30. Cindy, I just discovered your blog through a link to your Red Lobster Biscuits. I dearly love those biscuits, but not nearly as much as I love the Rosemary Focaccia we buy at the public market on Granville Island when we visit Vancouver, BC. Your pics look just like what I buy, and I'm probably going to drool straight through to morning, when I can go outside and pick some fresh rosemary to make this myself.
