Basil is my favorite herb but rosemary is a close second! There is something about fall that makes me crave food containing rosemary. Last weekend I made two of my favorites. Rosemary focaccia and a pork roast with a garlic rosemary rub.
I've been making this rosemary focaccia for years. I still remember the first time I made it and my first bite...I was in heaven! There is nothing like fresh warm homemade bread! Click here for the recipe.
A friend (and coworker) gave me this recipe for a Rosemary Garlic Rub. It is so good. I love it on Tri-tip but I used it on a pork roast and it was also good. Above is what it looks like before it's cooked. I rub it all over in the morning and then put it back in the fridge to marinate. Then I roast it for a couple hours. It gets this nice garlicy, spicey crust on it. It has a lot of fresh ground pepper in it so that's what gives it a little kick.

Rosemary Garlic Rub
1 tablespoon ground black pepper
1 tablespoon kosher salt
3 tablespoons chopped fresh rosemary
1 tablespoon dried rosemary
8 cloves garlic, diced
1/3 cup olive oil
In a small bowl, mix black pepper, kosher salt, fresh rosemary, dried rosemary and garlic. Gradually stir in enough olive oil to form a thick paste. Rub into desired meats before grilling.
Mmmmm, (mouth watering). I love rosemary too. I think I'll be trying that bread recipe very soon.
ReplyDeleteI do a similar rub on my tri tip, I just tend to use a bit more garlic (love garlic) and it is yummy!
Enjoy your day. I gotta go find something to eat now. Thanks alot! lol!
I LOVE rosemary. I even picked up some rosemary soap on my last vacation... so fantastic.
ReplyDeleteOh my gosh, Cindy - that looks SOOOO good! I think I can smell it from the east coast! Yummmmm!...Donna
ReplyDeleteyou have made me starving. i love garlic, rosemary, olive oil, YUM!!!
ReplyDeleteand all three have strong health benefits, esp. Virgin Olive Oil and Garlic.
That sounds great. Thanks for the recipe.
ReplyDeleteWow! That looks so good. I would love to have a thick slice of the roast & the bread for dinner. I love the combination of rosemary, garlic & olive oil - that is what I put on potatoes when I roast them. You make your own Focaccia bread ? You are multi-talented.

When we lived in Italy someone once told us that growing rosemary by your door is said to bring good luck :)

Oh yum Cindy! I'd love some of that bread to go with just olive oil dipping right now. It's good to see you celebrate yourself! Do a little bit of that everyday.

Dear Miss Cindy,
ReplyDeleteYou made me hungry. It looks fantastic. You should photograph food/table settings for a living.
I'll bet that rub would be awesome on lamb. Rosemary and lamb is great.
Thanks for sharing.

I just harvested all my herbs for the fall. I have loads of taragon, sage, and rosemary. I'll have to try these recipes.... looks so yummy.
ReplyDeleteCindy that looks amazing! Thanks for the recipes. Can you tell me what kind of pork roast that is in the picture? It looks like a great cut. Most of the ones I see now are so fat free that they are dry.

You have given me a great idea for christmas gifts... a rosemary garlic rub. I love your blog and your ideas.
ReplyDeleteI just wanted to say, the recipes look great! I love tri-tip! We moved last year from the Sacramento area to Georgia. I am sooooo happy we have Costco, they are the only place I know of in the Metro Atlanta area that carry my beloved tri-tip. Before we came no one had ever heard of it. I have to drive about an hour to the nearest Costco but it's well worth it. I love the wiki definition. I know have a list of people that I pick one up for when I go.
ReplyDeleteThat looks great! Do you think it would work well for chicken? I'm a fan of chicken more than pork and i'd love to use the rub sometime.
ReplyDeleteThose recipes look delicious! We have so much rosemary growing in our pool area. I will definitely come back to these recipes, so I can use our stash!
ReplyDeleteYeah! Really made me longing for baking that bread.
ReplyDeleteHope you have a good day.
Love Elzie
The pictures look great. The recipes ? yummy.
ReplyDeleteThabks for sharing them. Now where's my pen?
Hey kids............

Mary
I'm going to try (whoops, my husband will try...) the focaccia this weekend if it cools down a little here. Thank you for the recipe, the photos are delicious looking, Cindy!

This looks amazing! I think you should be a food photographer - these images are great, especially the one with the basil! That would make a cute pic to hang in a kitchen! :)
ReplyDeleteOkay, I'm drooling! Thanks for sharing the photographs and the recipes!
ReplyDeleteCindy, I just discovered your blog through a link to your Red Lobster Biscuits. I dearly love those biscuits, but not nearly as much as I love the Rosemary Focaccia we buy at the public market on Granville Island when we visit Vancouver, BC. Your pics look just like what I buy, and I'm probably going to drool straight through to morning, when I can go outside and pick some fresh rosemary to make this myself.
ReplyDeleteBeautiful blog and gorgeous photos, I'll be back often!
