Welcome to Show and Tell Friday! This week I decided to share the breakfast recipe that I've been eating the past couple of weeks! They are veggie, egg white cups.
I don't really use a recipe though. I just take some veggies...this time I used spinach, mushrooms red and green peppers and green onions.
I chop up the mushrooms and peppers and saute them in a non-stick pan that I sprayed with vegetable oil.
When they are softened I add some fresh spinach, the sliced green onions, and season with salt and pepper and any herbs you like (I used a little basil).
and saute those until the spinach is wilted. I cook all these veggies on medium high heat so they don't get too watery. The high heat makes the water that is released from the veggies evaporate.
Let the veggies cool a bit and then put some in muffin tins that have been sprayed with vegetable spray. I usually have some extra veggies left over but I just save those and put them in an omelette later.
I use egg whites that I buy at Costco but you can use whole eggs or fresh egg whites.
Just fill the muffin tins with the egg whites. You can fill them almost to the top.
This time I sprinkled some low-fat cheddar cheese on top. I usually don't do this though.
Bake at 350 degrees for 18 - 20 minutes or until egg is set. They will puff up a bit and then settle down as they cool.
I cover these with plastic wrap in the muffin tins and store them in the refrigerator. Now they are ready for those busy weekday mornings when you don't have time to make a healthy breakfast!
I take two to work every morning. I like to eat them on top of a toasted whole wheat English muffin half. I just break them up a bit and put a little salsa on top and I have a delicious and healthy breakfast! The are also good with a little Canadian bacon diced up in them. Just add that while you saute the veggies!
