This photo from my iPhone does not do this salad justice but believe me when I say that it was AMAZING! Even more amazing, it's a Weight Watchers recipe! I had a feeling I would like it because it has some of my favorite things in it...spinach, bacon, chicken, blue cheese and mushrooms!
I made it Saturday night for Dan and I and then I made it again Sunday night for my daughter! They both loved it too so I knew I had to share it with all of you! I left the apples out the second time and I think I liked it better without them. The only thing I did differently was use turkey bacon because I couldn't find any reduced-fat bacon which is what the recipe called for. I think it would be great with some toasted walnuts on it but that would up the points value.

I started back on Weight Watchers 3 weeks ago and I'm down 8.6 lbs! It feels good to see the scale going back down again! In fact I'm lower than I've been in about 9 years! I still have more to go but I feel so motivated now...especially when I can eat yummy food like this!
I'm toying with the idea of going back to WW it's the only thing that works for me! I clicked the link but I afraid it doesn't go to a recipe.

ReplyDeleteCindy -- looks yummy! And for lower fat bacon, look at "center cut" bacon. It's cut from a less fatty part and therefore has less fat, but is still the great pork taste. Wonderfully crispy!

ReplyDeleteThis looks so good! I started a super-strict diet this year and lost close to 20 pounds, but now that I have resumed my normal eating habits, the weight is creeping back up. I have been looking for new recipes that won't make me feel deprived, so I will have to try this one.
