Diet-Friendly Muffins

I'm always on the search for foods that will satisfy my sweet tooth but still allow me to lose weight.  I think I found this recipe on someone's blog last week but I can't remember where exactly but the original recipe came from Hungry Girl.

 These delicious brownie muffins taste like regular fattening muffins but they aren't!


  You just mix a can of pumpkin (yes pumpkin!) with a box of Chocolate Devil's Food cake mix...that's it, nothing else! No eggs, no oil...just canned pumpkin and cake mix.  They are only 181 calories a muffin!  Well....that's what it's supposed to be but I added 6 tablespoons of chocolate chips to the mix which added 35 calories to each muffin but so worth it!  216 calories in my version...not bad!


 They are so good and so moist! They really satisfy those sweet cravings and those chocolate cravings! They aren't overly sweet either...just perfect!

In case you were wondering...you can't taste the pumpkin!

  6. Oh wow, I will have to make these. I can't believe it's that easy! I've been working on getting back to the svelte person I was when I met my husband almost 4 years ago. It sure was a lot easier to put it on than it is to take it off!

  8. I checked out your muffins but do not eat grains or sugar at all so my muffins have to be made with almond flour. I do make some really good ones, this way of eating is called Primal Blueprint. You stop eating grains and you'll have to work to keep weight on no kidding. Nice blog and visit thanks.

  10. Pattie, yes the weather here has been great and it's supposed to get even better. It's in the lows 60s today and it's supposed to be 70 by the weekend! I feel for all of you in those blizzard conditions! I can't even imagine!

    My daughter should love these she is on a low carb diet and has lost a lot. Every now and then she wants something that looks, bad for you. LOL

  16. I love it...and I used to make something like that with unsweetened applesauce instead of the pumpkin...I think it was an old Weight Watcher's recipe. I hadn't thought about it in years but I'll bet the grand kids would LOVE to make these again. Thanks-Diana

  21. i have a couple cans of pumpkin and i love choco chips with pumpkin. around thanksgiving our local Ralphs Grocery Store, bakes choco chip pumpkin cookies! i will so try these. maybe even for super bowl sunday! the men don't need to know they are low cal :)

  28. MMM....another thing to do is to sub a can of diet coke for the oil, water and eggs for Chocolate cake mix and sub diet sprite, Fresca, or diet ginger ale in white cake. I'm going to bake scones to take to our football party tomorrow at work....!

  31. They are wonderful. My friend gave me this recipe a few years ago and I make them often. I use a can of pumpkin and a spice cake mix. My family loves them.
