Coconut Cupcakes!

We moved to a new building at work yesterday so for the last week I've been going through 8 years worth of stuff deciding what to keep and what to throw away.  It's so amazing how much junk and old paperwork, not to mention dust I have accumulated over that time!  It was worth it now that we are in our nice new office space!  You're probably wondering what the heck that has to do with cupcakes...
Well, I decided to make cupcakes to take to work to celebrate our move!  I had resisted the urge to buy those coconut cupcakes I showed you on my trip to Napa but I couldn't stop thinking about them so I made my own!
They were so good! They even have cream cheese frosting!  I used The Barefoot Contessa Coconut Cupcake recipe that you can find here.

Once I get settled in my new cubicle at work I'll show you what it looks like!

    Those cupcakes look delicious, and so perfect! You could easily sell those in an upscale bakery.

  7. I just love a good cupcake and those are delicious! I have made them myself. I think it's the cream cheese that gives them that extra UPMH!

  19. Cindy, you couldn't quit thinking about them cause I kept talking about them in my emails to you! LOL Sorry!! :) Now I want coconut cupcakes again! You're killing me with the pictures of all the goodies. (and my oven is broken...waiting on a new one to be delivered) I may have to find myself a bakery! :-D

With 3 sticks of butter for the cupcakes and 3 sticks for the frosting (not to mention the pound of cream cheese for the frosting!)I am sure they are nothing short of magnificent! It would have to be a very special occasion to indulge in these.

  35. One of my favorite desserts, the almond extract is just that "thing" that puts it over the top. Betcha can't eat just one...I know I can't!
