got zucchini?

I made Chocolate-Zucchini Cake to bring to work today. It's so good! Don't let the 3 cups of sugar fool you...it's not too sweet at all. Click here for the recipe. I left out the pecans because I don't like nuts in baked goods. If you've never had chocolate zucchini cake before I should tell you that you can't taste the zucchini, it just makes it moist. This cake is moist inside but has a crunchy outside...perfection! I think it would be better with some chocolate chips thrown in the batter because more chocolate is always a good thing! This will be the last baking I do for awhile...I just joined Nutrisystem!

  7. Looks soooo good! I also don't like nuts in any baked goods, I see Amy at Bunny Rose Cottage said the same thing, I'll pick them out or not eat it at all! Good luck with your diet, have you ever tried Jenny Craig? Their food is actually pretty good.

    Good luck on the diet. I always get so upbeat and excited when I try to lose weight and I do good for awhile then I cave in. I have a feeling you are the type to make it though.

  13. Wow, very good and very good! Also, my husband does not like nuts in baked goods either,and I LOVE zucchini cake, and a chocolate, chocolate, and more chocolate! MAYBE YOU WILL FIND A LOW CAL VERSION OF THIS CAKE!?

  16. It looks so good! I've been through LA Weight Loss, Jenny Craig, and Weight Watchers. I always seem to fall off the wagon. But about five years ago I managed to top 200 lbs. That was scary. I now weigh about 160, and as long as I can hold it to just under that, I tell myself to count my blessings! Menopause, you know! I know I need to lose more, but I'm not going to be unrealistic about my meds, etc.

  18. That looks So yummy! We DO have zucchini we need to use as a matter of fact.. BIG monsters!

    I don't like nuts in baked stuff either... cookies, brownies, or non baked like ice cream. I don't like one texture interfering with another, lol!

  23. Hi Cindy , you need to try one more cake before you start your weight loss program . I have it on my blog now .......it is called
    Peanut Butter Fudge Cake , it has 2 cups of reese cups in it and a whole lot more calories too. Whew it is so-o-o-o rich !

  24. You've come up with another winner. I've never tried chocolate zucchini cake but I will now. In our area zucchini squash is in abundance. I grate it and freeze two cups in each bag. It's especially nice for the holiday season.

    I just picked 3 zucchini from the garden today!
    We fried one for dinner and hubby wants zucchini bars tomorrow! I am going to surprise him with this cake next!

  32. When I was a kid my mom had a huge garden and we always had zucchini coming out our ears! She would make zucchini cakes, cookies, breads and she even put it in stuff like marinara sauces and casseroles... My brother and I hated zucchini (or so we thought). She only told us when we were older that all that mystery green stuff we use to chow down on was zucchini...
    I now will do the same type of torture to my kids. :) The recipe looks great.

  33. Yum! Chocolate zucchini cake!! I've never made it, though have wanted to. I may try this. It sounds great. I posted Bisquick Banana Bread today. Guess we were both in a baking mood. Good luck with Nutrisystem. I can get motivated for so many things, but changing my eating and exercise regimen is realllllly hard for me. Telling people about one's plans certainly helps the accountability!!
