Fresh Banana Cake

Made from scratch~ fresh banana cake with cream cheese frosting~Yum! This was baked last weekend, BEFORE the heat wave hit! Baking is the last thing I want to do now! It was 102 degrees yesterday and it's supposed to be 103 today! Lauren and I had to camp out in the living room last night because it was too hot upstairs to sleep. She got the couch and I slept on the air mattress on the floor. Luckily this heatwave is supposed to end this weekend!

Okay...back to the cake! Click here for the recipe. I use A TON more powdered sugar in my frosting than this recipe calls for and it isn't too sweet (a whole box of powdered sugar and then a little more from another box.) Also, don't over bake it because it will DRY out~ trust me on that!

  1. Oh yum! I love banana cake. I love creamcheese icing with it. Was this cake made for the two of you or did you make it for someone?

    We have been so blessed down here in So. Cal. The heat has not been bad. I'm dreading it though because I know it's coming.

    You poor girl! No a/c? I would die without a/c.

  3. This recipe looks really good, Cindy. Love a good banana cake!

    Wow, it's not even that hot here in sunny Florida. We're hovering in the low 90's in the Tampa Bay area.

    I can certainly identify with you about restless sleeping when it's so hot. Our A/C went out about a week ago and it was a full 24 hours before the repairman could get here to fix it. Ugh! With 4 ceiling fans running on high speed and a huge floor fan, it was still 90 degrees inside my house. It was so hot, sticky, and miserable that I only got a few hours of sleep. In addition, I was unbelieveably irritable and ended up with a splitting headache from enduring the unrelenting heat. And my poor dogs did nothing but pant for 24 hours! What in the world did we ever do before air conditioning?

    the heat. It's very hot and humid
    in my area also.

  8. Can decorate anything and also talented at cake decorating. What "can't" you do, Cindy! You must now be on vacation. Sorry it's so hot it's hard to enjoy it. I remember having an upstairs, and it does get hot. Well, have a tall glass of iced tea and a piece of that marvelous-looking cake and put your feet up! Course then you'll look around you and figure out something else to fix up!

  10. Oh my Gosh! A cake to die for. It sounds good and looks beautiful. So sorry the heat is so bad. Here in Roanoke, Virginia we had a lot of early heat but the last few days the temps have been lower but the humidity is no fun, but we don't have as high of temps as you are having, Thank goodness.

  13. I don't know how you do it with no A/C!!! We are supposed to warm up again to mid 90's and I complain. It's been mid 80's and I loved it. I love the banana cake!! I will try it this weekend. Did you decorate it too? You are so talented.

    HOT, yes it was 100 up here yesterday. The dogs just lied around. I too sleep downstairs. Sure wish I had air conditioning.

  35. It seems like every blog I visited today is doing a food post, and I got hungry looking at them. Banana cake goes so well with cream cheese icing. I always use double or triple of the amount of ripe or over-ripe bananas than what's called for in the recipe, that way the cake turns out lovely and moist. Hope you'll get some cool relief soon.

    This looks delicious and beautiful. I am going to give it a try. I look at your blog daily. I am hooked! For those of us that don't have a clue...can you give us any tips on icing? Your cupcakes, cakes, cookies etc. always looks so pretty. What tips do you use? Also, is there a certain kind of icing you like to use better than another? I would love for my baked goods to look like yours :-)

  40. Oh, I know....wasn't....and isn't....this heatwave AWFUL??!!! I don't have air conditioning either, and I live on the 4th floor so all the heat rises to my floor. I didn't even budge out of my bed all day today because it was too hot to move, and I didn't want to not have the fan blowing on my face. I was just watching our news, and Sandya Patel was saying it's going to be 96 where you and I live tomorrow. At least it's better than 103, huh?

    Anyway, your cake looks delish!!! Thanks for sharing the recipe!
