Pasta Pomodoro

I have so many ripe tomatoes from my garden so I made one of my favorite light dinners last night....Pasta Pomodoro. It's so simple...fresh tomatoes, garlic, olive oil, fresh basil and kosher salt. I don't use a recipe but if you would like one, this recipe looks very close to how I make it.

    I read your blog just about every day, and wow, you do inspire me. This dish looks delicious, and it IS tomato season here in the Ozarks. Know what we will be having for supper!   3. Mmmmm...looks yummy! I might have to make that one night this week for dinner. Unfortunately 'tho, my tomatoes will have to be the grocery store variety--not fresh out of the garden. Much to my dismay, I do not have a green thumb. In fact, I can't even keep the leaves on artificial plants! :(

  7. That is one of my favorite ways of preparing pasta. Sometimes I use cherry tomatoes and capers instead of the large tomatoes and basil.

    I love when people don't cook from a recipe but from the head and heart. That's how my father taught me to cook and that's how I teach my children. It's more about a method and putting complimenting ingredients together. Add some love to the pot and call it a meal!

    I DID make your recipe tonight, didn't have fresh basil or the cheese, but it was delicious with just the fresh garlic and fresh tomatoes, didn't even have olive oil...coconut oil had to suffice. Maybe next time I'll have all the ingredients. Could it be any better though?

  19. I just tried this recipe. It is delish. I had fresh tomatos and basil from my garden. I also added some shitake mushrooms. Very light and a great summer pasta. Don't ya just love making up recipes.

    By the way, just discovered your blog a couple days ago and enjoy it very much. I am also a "white" person. Everything in my house is white. Soooooooooo soothing and relaxing to me.
